Open-Faced Grilled Greek Burger


I'm getting my money's worth out of the most recent issue of Every Day with Rachael Ray. I've lost track of how many of the recipes we've tried this month. The most recent was definitely a hit with the adults. (The kids were less than enthused however. LOL!) Not surprising since these Open-Faced Grilled Greek Burgers featured grilled onions, feta cheese and portobellos, as well as an "unusual" choice of meat (for us). The actual recipe calls for ground veal but I subbed ground chicken instead and it worked well. The kid's choice would be either a burger from McDonald's or a plain burger swimming in ketchup with *maybe* a slice of American cheese. Dh and I loved it though. The feta added a salty bite and kept the burgers juicy. I love the flavor of portobellos with burgers and often saute up a few as a burger topper. The addition of the grilled onions made this burger look special and added a unique flavor to the sandwich.

Looks delicious! I like the ground chicken idea. Chicken breast is too dry for me, and I've been thinking I should do some experimenting with ground chicken.
