Pasta with Fresh Mozzarella and Basil
It's been pretty hot around here lately. This was my solution for a quick dinner when it's too hot to cook: Pasta with Fresh Mozzarella and Basil. In a large serving bowl I threw together a little basil from the garden and diced fresh mozzarella, added a can of roasted diced tomatoes, a little olive oil and some minced garlic and topped it with some hot fettuccine. A green salad on the side along with some artisan bread I picked up at my favorite bakery and I had dinner on the table without heating up the kitchen!
