Spring Do Over!

Lily gives this one a thumbs up! I knew I'd like Chicken Corn Chowder Topped with Avocado and Tomato when I first saw it over at Picky Palate but I never expected my picky daughter to even try it. She tried it and requested the leftovers for lunch the next day! (Modified to add: Lily was just reading over my shoulder and is making me add that she loves the chicken and the corn but she didn't like the tomato or avocado at all! And she likes it with lots of fresh ground pepper.)

Lily's New Year's "Revolution" to try new things is really working out well. Actually, I think she's the only one around here who is still sticking to their resolution. Mine has pretty much gone right out the window unfortunately. :-( I'm feeling a little better. I'm not out of breath walking across the room any more and I think my lungs are finally clearing out. Unfortunately too late for my relay race . (Waaahhhh!!!) I told them to go ahead and replace me this year. Not sure how the Mini Marathon's gonna work out. Hopefully I'll be able to run most of it but I'm giving up on my goal of a PB this year. (There's always next year.)

Since this winter has been a disaster when it came to all my goals and resolutions, I want a do over! A Spring Do Over! Here are my Spring Goals:

1. Run! Run at least 4 times per week.
2. Race! Race in as many local races as I can and try to get in another half marathon this fall.
3. Cook! Fix dinner at home at least 5 nights per week.
4. Cross Train! At least one day a week, cross train by swimming or bike riding.
5. Blog! Blog at least 4 times per week. Write more and learn how to take better pictures.
6. Entertain! Invite someone over for dinner once a month.
7. Plan! Get back to preparing a weekly menu and shopping list. Hopefully we'll be able to eat healthier and save some money.

How about you guys? Anybody else need a Do Over?


Chicken Corn Chowder Topped with Avocado and Tomato

2 tablespoons extra virgin olive oil
1 medium onion, finely chopped
3 large carrots, peeled and chopped
3 stalks celery, diced
4 cloves fresh garlic, minced
3 14 oz cans chicken broth
2 pound bag frozen corn or 8 fresh ears of corn, kernels cut off
2 large boneless skinless chicken breasts, cooked and shredded
1/2 cup heavy cream
8 ounces sour cream
Salt and pepper to taste

1 avocado -- diced
1 tomato -- seeded and diced

Heat oil into a large dutch oven over medium heat. When hot, sauté onion, carrots and celery until slightly softened, about 5-8 minutes. Stir in garlic and cook for for 1 minute then add chicken broth, corn and chicken. Cook for 5 minutes, until heated through. Reduce heat to low and stir in cream, sour cream, salt and pepper to taste.

Top with avocado and tomato. Add fresh ground black pepper if desired

I didn't make any "revolutions" in January, but if I was going to make some now it would be to life weights at least three days a week and run at least two days a week.
