Back to School!


How can it possibly be the first day of school? The temperature is hovering around 90 degrees. The sun is shining. It's the perfect day to head to the beach, not back to the classroom! Alas, I'm the only one dragging my feet about the back-to-school business. The kids are excited to start their new schools and meet some new friends.

To make the best of the situation, I've scoured the internet looking for yummy lunchbox ideas to make school lunches something special. We're trying to break away from the same old-same old PB & J or ham sandwich.

What do you send for school lunches? How creative do you get? Suggestions? Advice definitely welcome!

Here's a few lunch ideas that are going to be on our monthly menu plan.

Caesar Pockets - Romaine lettuce and turkey with Parmesan and Caesar dressing all wrapped up in a pita. Yum!

Favorite sandwich fixings in a pita, on a bagel, rolled as a wrap.

Citrus Chicken Salad - Chicken breast strips, mandarin oranges, slivered almonds. Delish!

Homemade soup packed in a thermos. Send fun toppers like popcorn or corn chips.

Fiesta Wraps - These are yummy! I've already blogged about them here.

Cheese cut into cubes or cut into fun shapes with a cookie cutter.

Greek Sandwich with Feta Vinaigrette - Juicy fresh tomatoes, salty Feta cheese, Kalamata olives. To die for! If I were taking this in a lunchbox, I'd hold off mixing the arugula with the vinaigrette until right before eating so the sandwich didn't get soggy.

Salad with dressing on the side.

Southwest Tuna Salad -- Tuna salad with black beans and corn. Serve it on bread. Roll it in a tortilla. Serve it on a salad. Mmmm!

Carrots and Celery Sticks with Ranch Dressing

Caprese Salad on a Stick - Cherry tomatoes, fresh mozzarella, homegrown basil. What's not to like!

Hummus and Pita Chips.

Club Sandwich Kabobs - A fun way to mix up a favorite sandwich.

A variety of fresh fruit for dessert.
