What We're Eating This Week:

Pantry Challenge Week: Part 2!

It's Menu Plan Monday at I'm an Organizing Junkie. Again this week I'm challenging myself to prepare meals using things I already have in the fridge or the pantry. Of course, my pantry is huge. (It used to be a full bathroom with a tub and everything but the previous owners took it out and turned the room into a pantry.) I have more stuff in my pantry than a small store so it shouldn't be *too* hard though I will make a run to the store for perishables: milk, eggs, bread and hopefully some fresh veggies.

Time to get creative!









Monday: Grilled Greek Chicken, Greek Salad

Tuesday: Grill at Grandmas! Crusted Poblano Burgers, Oven Fries, Snickerdoodle Muffins

Wednesday: Butternut Squash Risotto

Thursday: Simple Spaghetti Pie, garlic bread, salad (or Lobster Fra Diavolo)

Friday: Fall Break! Covered Bridge Festival Starts! We're eating fair food!

Saturday: Michelle married Jonny Fairplay! Eat at the reception.

Sunday: Celebrate all the October birthdays at a family reunion! What should I take?

tell me how you like the grilled greek chicken. it is a favorite at our house. thanks for the reminder to make butternut squash risotto!

The Grilled Greek Chicken was awesome! The husband loved it. The girls loved it (and picky dd doesn't love anything!). Even I loved it and I general don't care for any meats. Delicious!

I am so coveting that pantry! I have a metal cabinet in my back entry that I've turned into an extra pantry, but I would LOVE to have a whole room like that! Lucky!
