Chicken - Pumpernickel sandwich

I was hungry yesterday, but not really for anything in particular. I decided to make a sandwich, using bits and pieces of odds and ends to clean out the fridge before the big grocery shopping trip. As most of our bread was starting to turn a lovely shade of green, I decided to use up the last of the pumpernickel while it was still fuzz-free. I mixed a few chives, snipped from my herb garden, to the last of the cream cheese and spread it on the bread. Some sliced chicken and a slice of good swiss cheese came next and I topped it with some sliced red onion and some crunchy cucumber. A great way to clean out the fridge as well as a tasty lunch. I can't wait to have it again today!

That's gorgeous. I just made pumpernickel croutons this week with my leftover loaf. I love the stuff-it makes the best sandwiches.

Oooh! Croutons! I hadn't thought of that. I got a little carried away with all the great bread I found on our last trip to the big city and bought *way* more than we could (or should!) eat. I know what I'll be doing this afternoon! LOL!

I love this kind of sandwich! I definitely need to get more creative at lunch time. Looks great!
