One of the joys of summer! I needed a snack this afternoon but nothing really sounded good ... until I thought of Caprese Salad, a lovely mixture of juicy red tomatoes, creamy fresh mozzarella and basil. I just went to the local Farmer's Market so I had some tomatoes that while not as good as they will be in July were still pretty good. I've been keeping fresh mozz on hand lately and now that the cold weather is behind us, I can walk outside and pick my own fresh basil.
No recipe really. I just slice up a juicy, ripe tomato. Top with a thin slice of fresh mozzarella and a basil leaf. Drizzle with extra-virgin olive oil and some good balsamic vinegar. Add a pinch of salt and a few twist of pepper. Mmmmm!

This does look delicious. Redacted Recipes had a very similar post the other day -- I may have to jump on the Caprese bandwagon.
